Here is a lovely simple recipe for my “Coco-Nutty Bites.” Having a new born for me means being organised and making sure I am eating and hydrating myself with the right food and drink that will support me while i support my young son in these tender early months of his life and beyond.
This recipe is super quick to make and can be adjusted to whatever nuts or nut butters you may have on hand. Have fun experimenting with the different combinations you could try. Enjoy.
(Makes approximately 12 bites)
3/4 cup macadamia nuts
3/4 cup nut butter of choice ( I used cashew butter but almond, peanut or brazil nut would be lovely too)
1 cup shredded coconut
1 tsp vanilla extract
1 tbs maple syrup
2 tbs cacao nibs * ( You could also use raisins or chopped dried cranberries in place of the cacao nibs if you wish)
Steps to make the “Coco Nutty Bites.”
Place the nuts into a food processor and gently pulse till you get a rough texture.
Once you feel you have the right texture add the remaining ingredients into the food processor and gently pulse. Mixture should be well combined and have a dough like consistency, making it easy to roll the balls effortlessly.
Wet your hands and roll mixture into bite sized balls. Refrigerate and enjoy.
